Chicken Caesar Salad Wrap

Prior to having severe dairy issues – I loved me some Chicken Caesar salad! Now, I’ve found a GREAT dairy-free option for Caesar dressing…. from Tessemae’s! I’ve expressed my sincere love for Tessemae’s before but it seriously just keeps getting better. This Caesar dressing has the right amount of spice and tanginess. I LOVE it in this easy chicken salad wrap recipe. Want a vegan option? Use jackfruit in place of the chicken! Seriously, check out canned jackfruit (BPA free cans) from Native Forest! Love that stuff! Makes 1 serving

Caesar Chicken Salad Wrap
1 Paleo Coconut Wrap (or torilla shell, or lettuce leaf)
1 Tbsp Tessemae’s Caesar dressing
1/4 cup shredded cooked chicken or jackfruit
1/4 cup cauliflower, cooked and mashed
2-4 diced cherry tomatoes
1/4 cup microgreens, chopped (or kale/spinach/etc)
Dash of salt & pepper

  • In a small bowl, combine chicken, dressing, cauliflower, tomatoes, greens and salt and pepper. Mix until combined. Place mixture in the center of the wrap, roll up and eat!
