Chicken Broccauli Casserole

Chicken Broccoli Rice Casserole is one of our favorite comfort food dishes. This is an easy version that can be slow cooked. In addition, we cut out all the grains and dairy for a more paleo friendly dish. You can easily substitute whatever cheese you have on hand. This is also great with a simple bread crumb topping but equally great without it! Makes about 6-8 servings

Chicken Broc-cauli Casserole

3 large chicken breasts, diced
1 head cauliflower, finely chopped
1 head broccoli, finely chopped
1 onion, finely chopped
1 cup carrots, finely chopped
8 oz mushrooms, finely chopped
1 cup chicken stock
4oz dairy free cream cheese
2 tsp ground sage
1 tsp sea salt
1/2 tsp black pepper
2 Tbsp olive oil
1 cup dairy free shredded cheese

In a slow cooker, combine chicken, cauliflower, broccoli, onion and mushrooms. In a small bowl, whisk together chicken stock, cheese, salt, sage, pepper and oil. Pour over chicken mixture. Top with shredded cheese. Cook on high for about 4 hours. Alternatively, bake at 350F for about 45 minutes or until chicken is cooked through.
