Chicken Breakfast Hash

When I first started my elimination diet, my doctor and nutritionist both told me “don’t think you have to eat certain types of foods for certain meals. You can eat dinner items for breakfast.” I thought.. “What? You are crazy.” Turns out, it’s not so bad. We have been conditioned to want certain items at certain times of the day. For me, I want eggs or pancakes in the morning and chicken at night or for lunch. However, when you are on a strict diet and hungry, you will eat just about anything at any time. I’ve been trying to find sources of protein and carbs for energy while still following my diet and maintaining a healthy weight. This dish worked great. The hashbrown style potatoes give it a breakfast feel without the eggs or syrup! Plus it is hearty enough to eat alone or with a small bowl of fruit. Makes 2 servings

2 large potatoes, peeled and diced
1 tbsp olive oil
½ tsp minced garlic
½ tsp sea salt
¼ tsp black pepper
½ tsp cilantro
1 cup shredded chicken
1 avocado, diced
In a large skillet, pan fry potatoes in olive oil. Sprinkle potatoes with garlic, salt, pepper and cilantro. Cook for about 10 minutes or until potatoes are starting to brown and crisp. Add in shredded chicken. Remove from heat and spoon mixture onto plates. Top with avocados and additional cilantro if desired. You could also add your favorite toppings, such as salsa, sour cream, etc.
