I love lettuce wraps but I wanted to try a “softer” version. My nutritionist suggested that I cook all foods that I eat (fruits, veggies, etc). She gave me a recipe for “lettuce wraps” using cooked collard greens. I decided to use kale because it was what I had on hand. It’s a great alternative to cold lettuce wraps and tastes wonderful! It is a little trick to wrap up the chicken mixture but let’s face it, you are going to eat it anyway, how pretty does it need to be?? This makes 4 lettuce wraps (1 large serving).
4 kale leaves
½ cup chopped cooked chicken
¼ cup dried cherries, chopped
¼ cup apples, finely chopped
¼ cup avocado, finely chopped
1 tsp olive oil
½ tsp white wine vinegar
¼ tsp black pepper
¼ tsp sea salt
¼ tsp garlic
- In a sauce pan, gently boil kale until soft, about 8 minutes.
- Meanwhile, mix together chicken, cherries, apples, avocado, oil, vinegar, pepper, salt and garlic in a small bowl until combined.
- Lay the kale on a flat surface and place ¼ of the chicken mixture into the center and roll up.
- Repeat with remaining kale and salad. These will store in the fridge for a couple days so secure with a toothpick if desired.
