This recipe is very simple to make and yet has such a variety of flavor. The crispness of the broccoli and cabbage slaw is covered in a tangy, creamy dressing and topped with sweet cherries and almonds. This makes a great potluck salad for a picnic, BBQ or even a holiday meal. Plus, no cooking required! Makes about 8 servings
2 cups broccoli florets, finely chopped
2 cups cabbage slaw
1/2 cup mayonnaise*
2 Tbsp olive oil
2 Tbsp water
1 tsp ground mustard
1/2 tsp sea salt
1/2 tsp black pepper
1/2 cup dried cherries (or fresh cherries, chopped)
1/4 cup slivered almonds, or chopped walnuts
- In a serving bowl, combine broccoli and cabbage.
- In a small bowl, combine mayo, water, oil, mustard, salt and pepper. Mix until smooth.
- Pour over broccoli mixture. Top with cherries and almonds.
- Gently toss to combine. Refrigerate until ready to serve.
*I use a vegan, soy-free mayo that is great! It’s from Follow Your Heart brand.
