My favorite tea is Chai Tea. I love the bold, spicy flavors that make up the different chai blends. Those bold flavors also make a great donut (or even Chai Cookies!). Gluten free baking can be a challenge and it took me a couple times to get this recipe right. Just remember, don’t give up, eventually you will find a good blend of flours that you like but if all else fails, try a premade GF blend! This makes 6 baked donuts.
1 cup GF all purpose flour blend
¼ cup stevia, sugar or honey
½ tsp baking powder
1 tsp xanthan gum
¼ tsp sea salt
½ tsp cinnamon
½ tsp Chai tea blend (use the tea bag from the cup of tea you made)
¼ cup strong brewed Chai tea
¼ cup almond milk
½ cup applesauce
1 Tbsp olive oil
½ tsp vanilla
1 Tbsp strong Chai tea
¼ tsp Chai tea blend (from the bag you used)
¼ tsp maple syrup or extract
1-2 cups of powdered sugar (add more for a thicker glaze)
- In a large mixing bowl, combine flour, sugar, baking powder, xanthan gum, salt, cinnamon and tea blend.
- Add in egg, vanilla, oil, applesauce, milk and brewed tea. Blend over medium speed for about 30 seconds or until well blended.
- Spoon batter into a greased donut pan and bake at 350°F for about 15 minutes or until donuts are starting to brown and are cooked through.
- Mix together glaze ingredients until smooth and drizzle over cooled donuts. Sprinkle with ground allspice for an extra touch!
