Carrot Apple Slaw

A good coleslaw can go a long way. It can be served as a side dish, top burgers with it, etc. This version is perfect for fall. It combines crisp apples with sweet carrots and a tangy dressing. Get a little crazy and serve it alongside your holiday turkey!! Makes about 8 servings

1 head of purple cabbage, shredded (or even riced)
1 large apple, shredded
2 large carrots, shredded
1 Tbsp olive oil
2 Tbsp water
2 tsp apple cider vinegar
1 tsp honey
1 tsp sea salt
1tsp poppy seeds
1/2 tsp black pepper
1 tsp garlic or onion powder
In a large bowl, combine shredded cabbage, apples and carrots. In a small bowl, combine remaining ingredients for the dressing. Pour dressing over cabbage mixture and stir until combined. Cover and refrigerate about 30 minutes before serving.
