Caramel Root Beer Float

This recipe was one of my biggest hits. It is simply amazing! I’ll be honest, most typical root beer floats are made with loads of sugar, heavy creams and tons of ingredients. This is not one of those floats. This is made with a simple ice cream and one of my favorite kombucha treats – Live Kombucha Soda. It has the probiotic properties of regular kombucha with the great taste of soda! It’s really perfect. They have great flavors too – root beer, orange, limon, ginger and more! As soon as I saw the root beer, I KNEW I had to try a tasty Root Beer Float. Instead of using regular cane sugar for sweetener, I decided to use coconut sugar to get a caramel flavor. Results? Perfection. Makes 6 servings

4 cups cashew milk (or almond or coconut)
2/3 cup coconut sugar
1 tsp vanilla extract
1 bottle Live Kombucha Root Beer

  • In a mixing bowl, mix milk, sugar and vanilla until combined and sugar is dissolved.
  • Pour into an electric ice cream maker. I use this one, Cuisinart Ice Cream & Sorbet Maker with great results every time!
  • Once ice cream is complete, pour into a sealed container and freeze solid, or about 2 hours.
  • Once solid, remove from freezer and place a couple scoops into a serving glass.
  • Pour some root beer over ice cream and serve!
