Caramel Apple Salad

You know those shops at malls or shopping centers that have those HUGE, covered caramel apples?? Yeah, those that literally make you think – “did you just take a really healthy food and drown it in sugar, chocolate, candy, etc?”. Yeah, I’ve had one and it was amazing. Caramel apples are a great fall food – or at least those flavors are. I wanted to recreate a caramel apple with ease. I didn’t. I’ll be honest – my goal was 6 with different flavor combos. I got 2 1/2 apples – one was good enough for a picture, the others were a sloppy, sticky mess that my daughter took care of for me. The caramel was great; the chocolate sauce was delish; the apples were crisp – so I made a salad instead. Don’t worry, here’s the recipe for all of them so you can enjoy 🙂 Makes 6-8 servings

Caramel Sauce (Adapted from Against All Grain)
1/2 cup honey
3 Tbsp coconut sugar
1/4 cup coconut milk (cream from top of can)
2 Tbsp coconut oil
Mocha Chocolate Sauce
1 Tbsp coconut oil
1 Tbsp cocoa powder
1 tsp honey
1/4 tsp instant coffee grounds (optional)
6 apples, peeled and chopped
1/4 cup walnuts, chopped
1 tsp cinnamon

  • In a small saucepan, bring honey to a slow boil over low heat.
  • Whisk in coconut sugar, coconut milk and coconut oil. Stir until smooth and dissolved.
  • Stirring frequently, cook sauce for about 15 minutes. Remove from heat and let cool completely.
  • Meanwhile, in a small saucepan, melt coconut oil and remove from heat. Stir in cocoa powder, coffee and honey. Stir until combined and smooth.
  • In a large serving bowl, combine apples, walnuts and cinnamon. Pour over cooled caramel and chocolate sauce. Gently stir until apples are coated with sauce.
  • Refrigerate until ready to serve. Store in fridge.
