Caldo De Pollo – Mexican Chicken Soup

On those cold winter nights, you need a spicy, hearty soup recipe to warm you up! This soup will do just that! This soup is what I like to call Mexican Chicken Soup (or Caldo De Pollo). It features some spicy Mexican flavors in a flavorful broth for a tasty, comforting dish. Makes about 6 servings

2 large chicken breasts, cooked and shredded
1 large carrot, peeled and diced
1 large zucchini, peeled and diced
1 chayote squash, diced
1 large potato, peeled and diced
1/2 head of cabbage, finely chopped
1 lime, juiced
1/4 cup cilantro, finely chopped
1 jalapeno pepper, finely chopped
3-4 cups chicken stock
1 tsp sea salt
1/2 tsp black pepper
 

In a large stockpot, combine all ingredients. Bring a boil and cover. Simmer over low heat for about 40 minutes or until vegetables are soft. Serve with additional cilantro, avocados, salsa, etc.
