Cabbage & Brat Skillet

This is a complete meal recipe that is a combination of some of my favorite flavors. One of my favorite, easy foods my mom used to make us was Polka Kielbasa and Fried Potatoes. It was super easy but so tasty! I also love the flavors of corned beef and cabbage. This recipe has the potatoes, the cabbage with a bold bison brat plus tons of flavor from traditional spices. I used one of my favorite bison meats from Tropical Traditions. You could easily substitute beef, pork, etc for the bison. Makes 4 servings

2 medium potatoes, peeled and diced
1 cup cabbage, diced
1/4 cup onion, diced
2 Tbsp coconut oil
3 bison brats, diced
1/4 tsp caraway seeds
1/2 tsp garlic, minced
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp thyme
1/2 tsp paprika
Mustard, if desired
 

In a large skillet, melt coconut oil. Add in potatoes, cabbage and onion. Saute over medium heat for about 15 minutes or until potatoes are cooked through and start to brown. Add in brats and spices. Cook for an additional 10 minutes. Top with a drizzle of mustard, if desired.
