Buffalo Burgers with Coleslaw

We love trying new burger varieties. For some reason, coleslaw is great on a burger. We tried it long ago at one of our favorite restaurants, but this time we created our own version – with buffalo! Buffalo and venison are the only two red meats I can tolerate. We usually have venison in the fall but bison is hard to come by here. Anyway, the buffalo and coleslaw create a nice combination of flavors. We prefer the creamy coleslaw on the burger but I imagine you could easily substitute a German style slaw also. We also served it open-faced to save carbs/calories, but serve this on your favorite bun as you wish! Makes 4 servings

1 lb ground bison

1 tsp cumin

1/2 tsp chili powder

1 tsp black pepper

1 tsp sea salt

2 cups shredded cabbage

1 tsp poppy seeds

1/4 cup cider vinegar

2 tsp honey

1/2 tsp lemon juice

1/4 tsp sea salt

1 Tbsp mayonnaise (vegan/dairy-free, or regular)

 

  • In a large mixing bowl, combine bison, cumin, chili powder, pepper and salt. Mix together with hands until combined.
  • Form into four burger patties and grill or cook as desired. In a small bowl, combine mayonnaise, poppy seeds, vinegar, honey, lemon juice and sea salt. Whisk until smooth.
  • Place cabbage in a bowl and pour over dressing. Stir until cabbage is covered.
  • Top buffalo burgers with cheese, if desired and then with creamy coleslaw.
