Black Forest Brownies

I have found the perfect brownie recipe!!!!! Okay – let’s be honest, this was supposed to be chocolate cake…………….. but in my defense it makes an AWESOME brownie! Sometimes accidents turn out to be the best…. just look at my son 🙂 Anyway, these are dense and chewy with a little bit of crisp on the outside. I topped them with some tart cherries and chocolate drizzle and they turned out great! They are great for people with food allergies. They are vegan, Paleo-friendly, gluten-free, soy-free, dairy-free, etc. This makes 12 servings

1/2 cup coconut flour
1/4 cup almond flour
1/4 cup arrowroot starch
1 tsp baking soda
1/2 tsp salt
6 Tbsp cocoa powder
1/4 cup honey or maple syrup
1/4 cup coconut sugar
1/4 cup coconutoil, melted
4 Tbsp flaxseed
8 Tbsp warm water
4 Tbsp applesauce
1 tsp vanilla
1 cup cherries, pitted
1/2 cup water
1 Tbsp honey or other sweetener
3 oz dark chocolate
1 tsp coconut oil

  • In a mixing bowl, combine coconut flour, almond flour, arrowroot starch, baking soda, salt and cocoa powder. In a small bowl, combine flaxseed and water and let rest for about 5 minutes.
  • Add flax, applesauce, vanilla , honey and coconut oil to flour mixture and blend for about 30 seconds on low speed, dough will be thick and sticky. Spread into greased 8″ square pan and bake at 350F for about 20-25 minutes.
  • Meanwhile, bring cherries, water and honey to a boil in a saucepan over low heat. Boil for about 10 minutes until water is almost completely absorbed and the cherries are soft.
  • Remove brownies from oven and let cool for about 15 minutes.
  • In a small bowl, microwave chocolate and coconut oil for about 30 seconds or in small increments until melted.
  • Top cooled brownies with cherries and drizzle with chocolate sauce.
