Banana Cherry Smoothie

I really love cherries. But they are SO expensive here. Occasionally, you can find them for like $8/pound. And yes, sometimes I have to splurge and buy some. It’s rare – but can you blame me? Once I get them home, I hoard them from everyone else. I know it’s rude and selfish but I can’t help it. Then I let them sit in the fridge. I want to eat them all at once but I want them to last forever. Then they start to go bad. Who does that? It’s craziness. Once they start to go bad, I have to use them fast. What’s fast and uses fruits? Delicious smoothies, that’s what. This smoothie is so good – slightly sweet, yet tart and so creamy! Makes 1 smoothie

1 cup almond or coconut milk
dash of vanilla extract
1/4 cup coconut flakes (unsweetened)
1/2 cup ice (if desired)

In a blender, combine ingredients. Blend for about 30-45 seconds or until completely smooth. Pour into a glass and enjoy the fact that you have a tasty, healthy smoothie with no added sugar!
