Balsamic Strawberry & Cucumber Salad

This salad makes a great summer side dish. The sweetness from the fruit and the cool cucumber flavor go great together and the balsamic dressing adds a nice touch! Makes about 4-6 servings

Balsamic Cucumber Strawberry Salad

2 cucumbers, peeled if desired
1 cup strawberries, diced
1 tsp fresh mint, chopped
1 tsp fresh basil, chopped
1 Tbsp balsamic vinegar
1 Tbsp olive oil
1/2 tsp sea salt

Dice cucumbers into small pieces or for an even different presentation, spiralize them into noodle shapes. Put into a serving bowl. Add in strawberries, mint, basil, vinegar, olive oil and salt. Toss together until well combined. Refrigerate until ready to serve.
