This may be my newest favorite way to eat kale. I love kale – my family does not so it is a challenge to get it in our diets. I decided to try it like a wilted/sautéed spinach and use some of my favorite balsamic vinegar. It worked wonderfully! It is soft and full of flavor! The mushrooms are just a nice added touch. Makes 4 servings
4 cups kale, chopped
8 oz mushrooms, diced
2 Tbsp olive oil
1/4 cup balsamic vinegar (I used Fig Balsamic Vinegar)
1 tsp garlic salt
1 tsp black pepper
In a large skillet, saute spinach and mushrooms in olive oil. Add in vinegar, salt and pepper. Cook for about 10 minutes or until vegetables are soft.
