Balsamic Brussels & Tomatoes

This is such an easy side dish that I can hardly call it a recipe! I love brussel sprouts but in order to get my family to eat it I have to make it wonderful. Surprisingly, this dish worked for all of us. The balsamic flavors and tomato are perfect together and give the sprouts a nice caramelized coating. Makes 4 servings

balsamic brussel tomato

2 cups brussel sprouts, cut in half or quarters
4 roma tomatoes, sliced
1/4 cup balsamic vinegar
1 tsp italian seasonings (basil, oregano, thyme)
1/2 tsp minced garlic
1 tsp sea salt
1/2 tsp black pepper
2 Tbsp olive oil
In a baking dish, combine ingredients until coated with spices and vinegar. Bake at 375F for about 20 minutes or until sprouts are slightly soft and starting to crisp.
