Avocado Beet Dip

I’d like to call this hummus, as it is similar in texture but there’s nothing else that really resembles hummus: no beans! This is a very simple and healthy dip for any type of appetizer. It’s great with crackers, chips, veggies and my favorite: plantain chips. Plus, it’s just a few simple ingredients! Makes about 1 1/2 cups of dip

Avocado Beet Dip

1 small beet, peeled, diced and steamed
2 avocados, peeled, pitted
1 tsp minced garlic
1 tsp sea salt
1/2 tsp lemon or lime juice

In a blender, combine ingredients and blend until smooth. Refrigerate about 30 minutes prior to serving.
