This is just a simple, quick side dish that is easy to throw together on a busy week night. There’s really nothing fancy to it; it’s just a light and healthy side that goes well with just about anything. This would also work great in a foil pack to throw in the oven or grill. Serve alongside some fish or chicken and you have yourself a meal! Makes about 4 servings
½ lb asparagus, chopped into 2” spears
1 large yellow squash, sliced into ¼” slices
1 Tbsp olive oil
1 tsp white wine vinegar
1 Tbsp lemon pepper seasoning
1 tsp garlic, minced

In a large skillet, combine asparagus, squash and garlic in olive oil.

Sprinkle over lemon pepper seasoning and vinegar.

Stir mixture until veggies are coated with seasonings.

Saute over medium heat for about 15 minutes or until vegetables are crisp-tender.
