Asparagus and Squash Skillet

This is just a simple, quick side dish that is easy to throw together on a busy week night. There’s really nothing fancy to it; it’s just a light and healthy side that goes well with just about anything. This would also work great in a foil pack to throw in the oven or grill. Serve alongside some fish or chicken and you have yourself a meal! Makes about 4 servings

½ lb asparagus, chopped into 2” spears

1 large yellow squash, sliced into ¼” slices

1 Tbsp olive oil

1 tsp white wine vinegar

1 Tbsp lemon pepper seasoning

1 tsp garlic, minced


  • In a large skillet, combine asparagus, squash and garlic in olive oil.
  • Sprinkle over lemon pepper seasoning and vinegar.
  • Stir mixture until veggies are coated with seasonings.
  • Saute over medium heat for about 15 minutes or until vegetables are crisp-tender.
