One of the biggest things I miss on my current eating lifestyle is cheese…. any kind. There is this wonderful little thing called nutritional yeast that has a nutty, cheesy flavor without gluten, dairy, soy, etc. Plus, you don’t need very much to get the desired flavor. I love the combination of the yeast with the crunchy almonds plus some extra flavor from the garlic and lemon juice. Adding a little coconut oil gives it a great, parmesan like texture! Makes about 1 cup
In a food processor or small blender, combine almonds, yeast, garlic, salt and pepper. Pulse until almonds are slightly fine. Add in lemon juice and oil. Plus a few times until blended and crumbly.
Store in a sealed container in fridge for up to two months.
Great on salads, pasta, pizza, etc.
