Vegan Chocolate Frosty

Bananas are like my own personal “super” food. They may not meet the technical “superfood” requirements like cacao powder, turmeric, etc BUT it is super in the fact that it is SO versatile and SO delicious…. especially frozen. This blended little treat is like the perfect vegan version of a Frosty or shake or whatever you want to call it. It’s creamy, rich and thick. You can drink it with a straw or use a spoon, either way – I bet you’ll love it! Makes about 4 servings

4 small bananas, peeled and frozen
1/4 cup cacao powder
1/2 cup coconut water (or coconut milk for even creamier version)
2 Tbsp mesquite powder or maple syrup *see note*

In a large blender, combine banana, cacao, coconut water and mesquite powder. Blend until smooth, about 30 seconds (scrapping sides if necessary).

 

*Mesquite powder is VERY unique. It has what some would call an “earthy” taste. It is very bold and it’s flavor is very different. I have found that it does complement dishes with cacao powder and helps enhance this “ice cream” recipe. If you don’t have it, can’t find it or don’t want to use it, you can simply leave it out or add a touch of maple syrup for a bit of sweetness.*
