Sweet Potato Quesadillas

This recipe was really just supposed to be a quick test of some new tortilla shells I came across from Must B Nutty. However, the results were SO amazing, I had to share the recipe with you. First off, if you haven’t heard of Must B Nutty, go check them out! Oh my goodness… Paleo friendly, grain-free, egg-free tortillas?! Yes, they really exist and as you can see in the picture below – they are awesome. They are slightly soft out of the package but crisp up really nicely on the griddle or in a skillet. I am SO happy to have found them and can’t let myself run out of them! For the filling, I wanted a vegetable filled, meatless option that was packed with nutrients. During a “bad spell” for me, I have to consume blended or liquid foods to allow my body to heal naturally without extra irritation. These little quesadillas did just that because the filling was just steamed veggies served with a slightly crisp tortilla. Perfect! Don’t worry – my family ate these as well and LOVED them too! Makes 4 servings

sweet potato quesadillas

1 purple (or regular) sweet potato, baked or steamed
1 cup broccoli, steamed
1 cup carrots, steamed
1 avocado, diced
1 tsp sea salt
1 tsp cilantro, finely chopped
1/2 tsp black pepper
1/2 tsp garlic powder
8 Must B Nutty Tortilla shells (or other shells)

  • ┬áIn a large bowl, mash together potato, carrots, broccoli and avocado until blended. Add in salt, cilantro, pepper and garlic powder. Stir until combined.
  • On a griddle or large skillet over medium heat, place tortilla shells. Cook on each side for about 3-5 minutes until slightly crispy.
  • Spoon vegetable mixture over 4 shells and top with remaining shells. Serve with some salsa, sour cream, etc.
