Spicy Citrus Salmon

My husband and I have differing preferences when it comes to our salmon tastes. I prefer more spices, garlic and bite. However, my husband likes his salmon with a sweeter marinade. This recipe is the perfect combination for us. The red pepper flakes provide a little heat and the citrus marinade helps cool it off and sweeten it just a bit. We loved this served over black rice with a side salad but quinoa would be a good option too. Makes 4 servings

Spicy Citrus Salmon

4 2-3 oz salmon fillets
2 oranges, juice and zest
1 lemon, juice and zest
olive oil
1/2 tsp red pepper flakes
1 tsp ground ginger
1 tsp sea salt
1/2 tsp black pepper
1 tsp raw honey
 

In a small bowl, combine orange juice and zest, red pepper flakes, ginger, salt, pepper and honey. Whisk until smooth. Place salmon fillets in a bowl or pan and pour on marinade. Let rest in fridge for about 30 minutes. Remove salmon from marinade and grill or saute until cooked through. Garnish with orange slices.
