Simple Summer Skillet

There’s nothing like fresh garden vegetables to complete a meal. However, I must confess….. I do NOT have a green thumb. Of course, I’d love to grow my own but I’ve come to terms with the fact I can’t. Lucky for me, my mom can AND there is a fantastic farmer’s market located in Webb City plus a great local market – The Marketplace at Joplin Greenhouse that offers amazing produce, meats and more. This recipe features a variety of great spring & summer produce that makes a delicious side – or even breakfast option! Add your favorite veggies or meats for a complete meal. Makes 4 servings

1 lb asparagus spears, cut into 1″ pieces
3 cups greens (preferably kale, spinach or mustard greens)
2 cups baby potatoes, halved (any color variety)
1 cup broccoli florets, finely chopped
1 Tbsp coconut oil
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp chili powder

  1. Combine ingredients in a large skillet over medium heat.
  2. Pan roast vegetables for about 10-15 minutes or until cooked through and slightly crispy, stirring occasionally.

Add-in options: sausage, bacon pieces, ground beef/bison, shredded chicken…
Toppings: Ranch dressing, sauerkraut, hot sauce….
