Salmon Breakfast Hash

A good hearty breakfast is necessary to keep you going on those busy days. This dish is loaded with protein and healthy fats to do just that! It’s also very filling. You don’t have to save it for just breakfast – it’s great any type of day! Feel free to swap out these veggies with some of your other favorites but this combination really complements the salmon well. Makes 4 servings

1 salmon filet (3oz)

1 Tbsp olive oil

1 sweet potato, peeled and diced

1 turnip, peeled and diced

1 red potato, peeled and diced

1/2 cup carrots, diced

1 tsp sea salt

1/2 tsp black pepper

1/4 tsp cinnamon

1/4 tsp cumin

1/2 tsp chili powder

 

  • In a large skillet, combine olive oil, potatoes, turnip and carrots. Sprinkle over seasonings.
  • Cook over medium heat for about 15 minutes or until vegetables are soft, stirring frequently.
  • Meanwhile, place salmon, skin side down, in a greased baking dish. Sprinkle with a little salt and pepper and bake at 400F for about 10 minutes.
  • Place vegetables on plates and place pieces of salmon on top. A little drizzle of honey is also great on this dish.
