Rocky Road Ice Cream

There’s not much better on a hot, summer evening than a cool bowl of chocolate ice cream. This dairy-free treat is creamy, filled with marshmallows and chopped nuts. It’s really perfect. What makes this dish is the fresh made marshmallows. The Urban Poser has several marshmallow recipes in her book, My Paleo Patisserie. I really love this book! If you are an avid baker, you’d love it too! If you aren’t up for the homemade marshmallow challenge, just use your favorite brand or leave out! Makes 4 servings

Rocky Road Ice Cream
2 cups coconut milk ( (Try So Delicious Original Culinary Coconut Milk!)
1 cup almond milk (Try So Delicious Almond Milk)
3/4 cup coconut sugar or honey
1/3 cup cocoa powder
1 tsp sea salt
1/2 cup marshmallows, chopped
1/2 cup walnuts, chopped

In a mixing bowl, combine milks, sugar, cocoa and salt. Blend until sugar has dissolved. Pour into an ice cream makerand churn according to directions. I have this ice cream maker and I love it. Once ice cream has finished churning, pour into a bowl and stir in marshmallows and walnuts. Scoop into bowls or cones and serve.
