Poached Egg Basket

Have you ever tried poached eggs? I hadn’t even heard of them until I was well into my 20s and then I always thought they were ‘too much work’.  However, once I made them, I fell in love!

You can easily make your own a couple of different ways. Here’s a quick link on how to do it using some boiling water in a skillet from Betty Crocker. Here’s another link on how to do it in the oven from The Kitchn. If poached eggs aren’t your thing, top the veggies with a fried egg or even hard boiled.

I started making them often enough that I bought myself this easy little egg poaching skillet. It whips up several at a time with very little work. Find it here on Amazon!

This breakfast meal is our go-to after we’ve indulged a little too much – usually after a holiday or celebration. I saw a meme that said “The week between Christmas & New Years: I don’t know what day it is, I don’t know what I’m supposed to be doing, I should probably eat a vegetable.” While funny, it’s so true. This meal is great for getting back on track – plus it’s delicious!

Instructions
  1. In a large skillet, heat oil over medium heat.
  2. Add in vegetables and seasonings.
  3. Cook for about 20 minutes over medium heat or until potatoes are cooked through and slightly crisp.
  4. Plate vegetables and top with a poached egg.
