Creamy Basil Chicken & Pasta

I’ve always been a pasta lover – carbs were always my friend in general.

After being Paleo for many years and giving my body time to heal, I decided to try reintroducing some foods. So far, so good! I can now tolerate eggs and some grains or legumes. Now, I still limit these quite a bit just for my personal health.

If you don’t eat pasta, you can still serve this over zucchini noodles or even by itself.

I’ve been testing out numerous gluten-free pastas. I really like Ancient Harvest brand. They have a large selection of pastas using a variety of ingredients. Some use quinoa, corn or rice – others use lentils, etc. They cook up easy and have a good taste. I’ve seen them at Wal-Mart and Natural Grocers (since that’s what we have locally) but you can also order them on Amazon here.

Dairy is still out for me so I use Kite Hill Plain Cream Cheese in this recipe but you can use regular cream cheese or another dairy-free alternative if you prefer.

We love this recipe because it is very easy to put together yet tastes similar to a fancier dish you might find at a restaurant. Save some time and use pre-cooked chicken. We always have some shredded chicken on hand for quick meals like this but you can use a rotisserie chicken too! Otherwise, just cook up some chicken breasts in a skillet or even on the grill to use in this recipe.
