Paleo Taco Burger

It’s no secret that we love to grill and we love burgers. It’s also no secret that we love salsa. In fact, I’m pretty sure my husband’s last meal would be simply chips and salsa. Not kidding. Sure the traditional burger is great but we love changing it up a bit. This past month, I’ve been testing different burger flavor combos and this has by far been our favorite! All the flavors of a burger and a taco without the bun or shell. Don’t worry – I don’t think you’ll miss it! Makes 4 servings

1 lb ground grass-fed beef (or bison, venison, turkey)
1-2 Tbsp taco seasoning (*see note for brand ideas!)
1 small onion, minced
1 jalapeno, minced
1/2 cup prepared guacamole
4 cups lettuce or mixed salad greens
1/2 cup salsa
Fresh cilantro, finely chopped

In a medium bowl, combine ground meat, taco seasoning, onion and jalapeno. Mix until well blended and form into 4 patties. Grill to desired temperature.

Put about 1 cup of salad greens on a plate or serving dish. Top with grilled burger, guacamole, salsa and cilantro.

Other topping ideas as desired- grilled peppers or onions, sliced tomatoes, sour cream or cheese.
