Mint Chocolate Chip Ice Cream is one of my favorite treats. We don’t have homemade ice cream often, but I do usually have a smoothie daily for an extra boost of nutrition. Smoothies are much better when they taste like a favorite dessert – like this one! In the recipe, I use natural green coloring from spirulina and spinach. I also left out any added sweeteners and used cacao nibs instead of chips. This makes it a healthy, nutritious breakfast or snack without the guilt and all of the flavor! Makes 1 serving
1/2-3/4 cup coconut milk
1 cup spinach
1/2 cup ice, if desired
1/2 tsp spirulina powder (optional)
1/8 tsp peppermint oil
1 Tbsp cacao nibs
In a blender, combine banana, avocado, milk, spinach, ice, spirulina and peppermint oil. Blend for about 30 seconds or until smooth. Add in cacao nibs and pulse a couple times to mix in.
