Loaded Chicken Veggie Soup

Who says chicken noodle soup has to be the most comforting? After all, traditional noodles are quite the opposite for me. This soup is literally LOADED with vegetables. It is very hearty, yet light in fat and calories. It’s very filling and has great flavor. Want a shortcut? Cook this in the pressure cooker! It literally cooks raw chicken and vegetables in less than 20 minutes!!! I really like this pressure cooker (from Amazon). You can also throw these ingredients in the slow cooker for an easy meal as well! Makes about 6 servings

LOADED CHICKEN VEGGIE SOUP

2 large chicken breasts
1 Tbsp olive oil
3 cups mixed vegetables, diced small (cauliflower, carrots, squash, celery)
1 large potato, peeled and diced
2 tsp parsley
2 tsp sea salt
1 tsp black pepper
1/2 tsp thyme
1/2 tsp oregano
4 cups chicken stock or water

In a large stock pot, brown chicken in olive oil over medium heat. Cook for about 3 minutes on each side. Add in remaining ingredients. Cover and cook over medium heat for about 45 minutes or until chicken is cooked through and vegetables are soft.022415
