This recipe is very simple, yet elegant. Slow cooking the apples with the spices and sauce makes the take on a great flavor and texture without a lot of work. Merlot is a wonderful addition to the cinnamon apple flavors. These apples could be used in a pie or pastry, served with ice cream, thrown into some oatmeal, or just eaten plain! An added bonus is that they make your house smell fantastic! This makes about 6 servings
4 sweet apples (I used Red Delicious)
1 Tbsp coconut oil
½ cup Merlot or other red wine
1 Tbsp cinnamon
1 tsp apple pie spice
¼ cup sugar or stevia
1 Tbsp GF flour
½ cup walnuts or pecans
- In a crock pot, melt oil. Add in wine, cinnamon, apple pie spice, sugar and flour. Stir until well combined.
- Add in peeled, cored and thinly sliced apples, peeled, segmented oranges and walnuts. Stir apples until coated with spice mixture.
- Cook on high heat for about an hour, stirring 4-5 times. Let cool about 10 minutes to allow sauce to thicken. Serve as desired.
