Chicken & Wild Rice Soup

This is a family favorite soup that is the ultimate comfort food at our house. It is filling, chocked full of veggies and flavor. It also freezes well! We make a double batch and freeze some for those cold, busy winter nights! Makes about 6 servings

2 cups shredded cooked chicken
1 cup wild rice
1 cup diced carrots
1 large onion, diced
½ cup celery, diced
½ cup mushrooms, diced
2 cups chopped kale or spinach
2 garlic cloves, minced
3 cups chicken stock
1 cups milk (dairy-free if necessary)
1 tsp sea salt
1 tsp black pepper
1 tsp thyme
1 tsp parsley

 

In a large stock pot, combine all ingredients. Cover and cook over low-medium heat for 30-40 minutes or until rice is tender and vegetables are cooked through.
