Cherry Limemade Mug Cakes

So I may be going a little crazy with this “Microwave Mug Cake” but I truly love the recipe and creating different varieties! This version is one of my favorites, especially for summer. Who doesn’t love Cherry Limemade? Once again, thanks to The Healthy GF Life for giving me the idea for the base recipe! Makes 2 servings

4 Tbsp almond flour
2 Tbsp arrowroot starch
1 Tbsp flax seed
2 tsp coconut flour
1 tsp baking powder
1/4 tsp sea salt
Zest of one small lime
Juice of one small lime
3 Tbsp coconut oil
2 Tbsp honey
3 Tbsp applesauce
Icing
3 fresh cherries, pitted
1 Tbsp coconut milk cream
1 tsp honey

  • In a small bowl, melt coconut oil. Add in remaining cake ingredients and stir until well blended.
  • Divide batter and place into two coffee mugs greased with coconut oil.
  • Cook in the microwave on high for 1 minute 50 seconds. Let cool in mug about 10 minutes.
  • Carefully remove cake by separating sides with a butter knife. Turn onto serving dish.
  • Meanwhile, combine icing ingredients in a small blender or Magic Bullet until smooth. Spread the icing over the cake and garnish with a cherry and lime slice.
