Baked S’mores

We love s’mores during the summer… actually all year. We have had SO much rain that it has been rather difficult to have s’mores since everything is so wet. SO we had to improvise and move our treat indoors. This basically takes just a few easy to find ingredients and bakes them up into a nice, sweet treat. Use ingredients that fit your needs: for example, gluten free or grain free grahams, vegan marshmallows or allergy-friendly chocolate. I have included links for my favorites. Makes 4 servings

Baked Smores

8 graham crackers, broken into pieces (see my recipe here)
1 cup marshmallows (about 10 large) (Dandies is a pretty good brand)
1/2 cup chocolate chips (Enjoy Life Chips)
Coconut oil for greasing baking pan

Grease a pie pan or other baking dish with coconut oil. Place graham pieces in bottom of pan. Top with marshmallows and chocolate chips. Bake at 400F for about 6-8 minutes or until marshmallows are golden brown and chips are melted.
